Do you ever get stuck in a dinner rut? I know I do. All. The. Time. I love seeing what other people are eating for dinner just to get some fresh ideas, and try something different. I’d love to know in the comments what your dinner plan for the week is, or if you have an awesome recipe you want to share!
And now with Summer officially in full swing, I’m so excited to start eating from our garden in a bit. There’s nothing quite like a fresh tomato you’ve plucked from the vine right before dinner. Unfortunately it will still be a bit until our tomatoes are ready, but that doesn’t stop me from wanting that Summer flavor like in this week’s Caprese Green Salad.
As always, we have good intentions to eat dinner at home every night. But sometimes a frozen pizza is all the effort we can muster. Especially with the Summer sun being out so much later. We get to playing with the kids outside, then next thing we know it’s bed time!
I’ve been trying really hard to plan for really simple dinners, so have been using a lot more pre-packaged items than I normally would like. But when it boils down to (no pun intended) either packaged help homemade, or take out. I feel like any type of homemade wins every time.
Weekly Meal Plan #70 – 6/19/17
This is How We Do It:
Kielbasa, Corn, Baked Beans
Nothing magical or difficult about this dinner, except how much it screams Summer! We have a yummy glaze of honey, orange juice, and wasabi (optional) that we put on the kielbasa before cooking
Gyros w/Tzatziki
Trader Joe’s has this sliced Gyro meat that you pan fry for 20 seconds each side. Warm the pita bread in a hot pan quickly, put the meat, tzatziki, sliced tomatoes, sliced red onion, and feta in the pita and enjoy.
Chicken Fajitas
This recipe from Simply Recipes looks really good, I think we’ll try it.
Cauliflower Fried “Rice”
A delicious alternative to using white rice. I love the flavor and texture using cauliflower gives!
Caprese Green Salad
Chop up some fresh romaine in large chunks. Add slices of tomatoes, heirloom if you can get them, and slices of fresh mozzarella. If you want it to be a little more substantial you could also add grilled chicken and croutons. Dress with olive oil and balsamic vinegar.
Curry Meatball Pitas
One of the best 10 minute meals out there!
Ranch Chicken Lettuce Wraps
With bacon and avocado. Need I say more?
