Full disclosure, or “straight talk” as my company would call it, I’m out of town again this week so we’ll only be eating maybe two of these dinners. Even though my husband does most of the cooking, he won’t cook a ton while I’m gone. And I don’t blame him. When you’re one on two defense it’s every man for himself. Especially when the youngest of the two is currently VERY two right now.
I still wanted to give you a full week’s worth of inspiration though, so I gathered some awesome recipes from around the interwebs to share with you. Most of these look not only delicious, but fairly easy to execute.

This slow cooker recipe comes from Salt and Wit and sounds amazing.
What I love about these is the huge variety of topping options.
It’s been waaaaay too long since we’ve had this.
If you can find pre-cut mango, these would be really easy and delicious!
Black and Blue Steak Salad
A great standby. Lettuce, tomato, avocado, black olives, radicchio, grilled and sliced steak, French fried onions, blue cheese crumbles, dressing.
One of our Trader Joe’s super quick and easy weeknight meals. Probably one of the two we’ll have this week.
