Welcome to the 67th Weekly Meal Plan, to help provide you with some dinner inspiration. Here we are, another Memorial Day weekend is in the books. It feels like it kind of snuck up on us. But now I’m ready for summer and full on camping mode.
I also want to step up our grilling and smoking game this summer. So be on the lookout for a plethora of grilling meals. Plus, as I’ve mentioned before, I’m the one that does the dishes (my husband does the cooking) so I’m all about meals that don’t use pots and pans.
Weekly Meal Plan 67 – Week of 5/27/17
This is How We Do It
Turkey Patty Melt
We still have some leftover rye bread from both Week 66 and Week 65, so we’ll hopefully use the rest up this week with a healthier-ish patty melt. Grill up a couple of turkey burgers and white onion (slice and wrap in a foil pocket before putting them on the grill), toast the rye bread, and top with cheese of your choice.
Creamy Zucchini Prosciutto Pizza
Use the Trader Joe’s frozen pizza crust (it’s seriously soooo good), and instead of pizza sauce spread alfredo sauce (jar kind is perfect) on the crust. Top with mozzarella, slices of prosciutto, and very thin slices of zucchini. Cook per crust package instructions, and be sure to top with parmesan cheese before eating!
French Onion Steak Sandwiches
This will be an open faced sandwich. I bought some thin 8oz New York strips from work the other day, so we’ll grill those up. Toast a couple of large slices of French bread. Put the grilled steak on top of the toasted bread. Top with Frenched onions (you know, the kind you put on top of green bean casserole)
Avocado, Shrimp, Corn Salad
I was playing around in this meal prep app called Mealime and thought this looked yummy.
Orange Chicken and Rice
A classic stand by dinner from Trader Joe’s frozen section (they’re famous for their Orange Chicken).
Buddha Bowl
We’ll probably substitute the steak with chicken this time.
Grilled Cheese and Tomato Soup
Just the classic, nothing fancy.
