Weekly Meal Plan 5/7/17 – 64 Weeks of Dinner Inspiration to Help You Eat at Home

I’m out of town for work pretty much the next two weeks straight. That means lots of frozen and pre-made meals for the hubs and fam. Which is funny, because he’s the one that does all the cooking.

Luckily, my parents feed the kids in the evening before we get them, so it’s not really that big of a deal. But I’ll still give you a full week’s worth of meal planning inspiration to help spark those dinner juices.

It’s a private group, so if you don’t want your spouse to see that you’re seeking outside advice on what to have for dinner, no worries only people within the group can see the posts.

Already we have a lot of great ideas going back and forth within the group, and I can’t wait to see what everyone’s eating, or looking to eat, for dinner!

Now on to our weekly meal plan

Weekly Meal Plan 5/7/17

This is How We Do It:

Salmon Arugula Sliders w/Hollandaise

Cook the salmon however your favorite way to prepare salmon is. Here’s a good one from kitchn.com. Then simply flake off a few chunks and put them on a slider bun. Top with fresh arugula and hollandaise sauce. I like to use the pre-made kind from Trader Joe’s.

Steak and Egg Buddha Bowl

Pork Tenderloin, Buttered Egg Noodles, Roasted Broccoli

We like to grill the pork tenderloin. Use a thermometer and make sure the internal temp reads 145°. To roast the broccoli, Preheat the oven to 425°. Put the broccoli on a foil lined pan. Drizzle with olive oil, salt, and pepper, and cook for about 20 minutes.

Shrimp Scampi Over Zoodles

I saw this recipe on Delish.com and it does look delish.

Prosciutto Arugula Pizza

I use the Trader Joe’s pizza crust, drizzle olive oil on it, then sprinkle either shredded mozzarella cheese, or sliced fresh mozzarella. Put the prosciutto on top of that, then bake the pizza per package instruction. Meanwhile mix some olive oil, fresh squeezed lemon, salt, and pepper in with the arugula. When the pizza’s done, pile the arugula on top with shaved parm.

Pretzel Dogs w/Horseradish Pub Cheese

Just a hot dog, on a pretzel bun, spread with some horseradish pub cheese I found in the cheese aisle of the grocery store.
