After I created this week’s meal plan, I realized that Friday is St. Patrick’s Day. So while you may not see corned beef and cabbage on the menu, we will probably get our Irish on at some point during the week.
I did manage to get some Murphy’s and Guiness at the store to make Chocolate Chip Cookie Stout Floats, yum! Keep an eye out for the recipe, coming soon to a blog near you.
Now remember, all of these menu ideas are completely doable. Even if you’re not familiar with something, give it a whirl. If we can manage to cook any one of these on a given night, anyone can. This meal DEFINES If I Can Do It, You Can Do It. You’ll feel like a fancy chef, and be blow away at how easy it is to make!
Prosciutto Arugula Pizza
One of these days I’ll get around to posting a recipe for this. Until then, we use the Trader Joe’s frozen pizza crust. Instead of pizza sauce, drizzle olive oil over the crust. This next step is where my husband and I differ… He says to put the prosciutto first, then the mozzarella. I say to put the mozzarella then the prosciutto. Either way it will be delicious.
Cook the pizza per directions on the crust package. Meanwhile, toss some arugula in about a tablespoon of olive oil, juice from half a lemon, salt and pepper. Once the pizza is cooked, pile the arugula on top of the pizza then finish with parmesan cheese.
Crispy Chicken Caesar Salad
I have some breaded chicken tenders in the freezer (TJ’s makes a really good one). Bake those off and toss them in your Caesar salad, that you made from chopped romaine and Caesar dressing.
Turkey Burger w/Sweet Fries
Mix a little bit of bread crumbs in with your ground turkey when making the patties. That keeps them more moist. Then use this recipe for fresh cut steak fries, but substitute sweet potatoes.
BFD (Breakfast for Dinner)
Dealer’s choice. We usually do sausage, pancakes, and eggs. We may mix it up this time though and make Breakfast Shepherd’s Pie in honor of SPD.
