Warning, I will be out of town pretty much the next two weeks straight, so much of my dinner plans will consist of frozen meals and leftovers.
I hope you’re enjoying this new format of our weekly dinner plan. I tried last week to just leave you with a list of what we were planning to eat and nixed the pretty chalkboard image I was a little obsessed with last year.

Recipes and How-To for Week 54 Dinner Plan
Buffalo Chicken Pizza
I actually first made this one last minute at the same time I was making the Banh Mi Pizza and loved it so much I put it on Dinner With the Rollos.
Mushroom Chicken Alfredo
All about ease here. I have some frozen chicken tenderloins in the freezer, sliced mushrooms in the fridge, and a jar of alfredo sauce in the pantry (Trader Joe’s is the best jarred alfredo sauce if you’re in a pinch). While the pasta is cooking, saute the chicken and shrooms, stir in the alfredo sauce, then toss in your cooked pasta… linguine for us this week.
Chicken Orzo Soup
My sister in law gave us some so I don’t have an exact recipe, but this one from Let’s Dish looks like it might come close.
Avocado Eggs Benedict
Layer toasted English muffin or crumpet, slice of Canadian bacon, 3 slices of avocado, poached egg, hollandaise sauce. Trader Joe’s has the best pre-made hollandaise sauce in the refrigerated section. Otherwise my mom taught me a method similar to this that is super quick and easy.
Chicken Tikka Masala
Normally we buy a jar of Tikka Masala sauce and simmer some chicken in it, then serve it over white rice. But this week we’re going with a TJ’s special from the refrigerated section.
Meatloaf, Teeny Potatoes, Salad
Once again, going with an already made meatloaf. We just cut some little teeny potatoes in half. Coat them in olive oil, salt and pepper. Then roast them off in the oven at 350° for 20 minutes.
