We love making a more traditional ceviche in which the white fish essentially “cooks” in the acid of some lime juice, but this method is equally delicious and takes a LOT less time to make. You basically just chop everything up, stir it together, and you’re good to go.
Ingredients
- 1 Pound Cooked Shrimp, Roughly Chopped
- 1 Cup Chopped Pineapple
- 1 Avocado, Diced
- 1/2 Red Onion, Diced
- 1/2 Jalapeno, Finely Diced
- 1/4 Cup Chopped Cilantro
- 5-8 Limes (Depending on Size)
- Salt and Pepper to Taste
Instructions
- Put all the ingredients in a bowl
- Squeeze all the limes into the mixture
- Season generously with salt and pepper
- Stir together
- Taste and add salt and pepper as needed
- Serve with tortilla chips for dipping, or scoop on top of a tostada shell
