Shrimp and Pineapple (Cheater) Ceviche

We love making a more traditional ceviche in which the white fish essentially “cooks” in the acid of some lime juice, but this method is equally delicious and takes a LOT less time to make. You basically just chop everything up, stir it together, and you’re good to go.

Shrimp and Pineapple (Cheater) Ceviche

Ingredients

  • 1 Pound Cooked Shrimp, Roughly Chopped
  • 1 Cup Chopped Pineapple
  • 1 Avocado, Diced
  • 1/2 Red Onion, Diced
  • 1/2 Jalapeno, Finely Diced
  • 1/4 Cup Chopped Cilantro
  • 5-8 Limes (Depending on Size)
  • Salt and Pepper to Taste

Instructions

  1. Put all the ingredients in a bowl
  2. Squeeze all the limes into the mixture
  3. Season generously with salt and pepper
  4. Stir together
  5. Taste and add salt and pepper as needed
  6. Serve with tortilla chips for dipping, or scoop on top of a tostada shell
