Quick and Easy Coleslaw

This amazingly easy coleslaw recipe is our go-to when it comes to any meal requiring coleslaw. Add some fresh lime, a squirt of Sriracha, and chopped cilantro, and voila! You’ve got a delicious fish taco condiment. We like to mix up what kind of vinegar we put in it. Lately I’ve been using a local honey vinegar which adds it’s own sweetness. In that case I would use a little less sugar. Just plain old white vinegar works really well.

Quick and Easy Coleslaw

Ingredients

  • 9oz Coleslaw Mix (or chop red and green cabbage with shredded carrots)
  • 1/3 Cup Mayonnaise
  • 1 Tablespoon Vinegar (start with this and add more to taste a teaspoon at a time)
  • 1/2 Tablespoon Sugar (remember to adjust of your vinegar is on the sweeter side)

Instructions

  1. Put the coleslaw mix in a bowl
  2. Add mayonnaise
  3. Stir
  4. Add vinegar and sugar
  5. Stir
  6. Taste
  7. Adjust as necessary
  8. Allow to sit in fridge for at least half an hour to let the flavors meld
