I originally made this Pomegranate Ginger Champagne for New Year’s Eve this year, and made mocktail versions for the kids. But as the Academy Awards are approaching, and Valentine’s Day, I realize there are a TON of festive occasions this sparkly drink would be perfect for.
Plus, did I mention there’s a gold sugared rim?!?!? Sparkle sugar may be my new favorite find. I mean, you could rim a plain old glass of cranberry juice with gold sparkly sugar and instantly glam it up. And I say, you don’t even need to have a reason like New Year’s Eve or Valentine’s Day.
The thing to remember when you’re garnishing any glass with any sort of fruit, is you want to make sure and cut a slit in the fruit so that it sits easily on the rim. As a former bartender (turned mom), doing this is second nature for me. But I realized once, when a friend tried to shove a lime wedge onto a glass, that not everyone thinks to make that extra cut.
How to Make Pomegranate Ginger Champagne or Mocktail
Ingredients:
- Champagne or Prosecco – Use Sparkling Cider for a Non-Alcoholic Mocktail
- Pomegranate Seeds
- Pomegranate Juice (I used Trader Joe’s Sparkling Pomegranate Juice)
- Ginger Beer
- Lime
- Gold Sparkling Sugar
Directions:
- First thing you want to do is sugar the rim by running a lime around the glass, then dipping it into a bowl or plate of the gold sugar.
- Drop a handful of pomegranate seeds into the bottom of the Champagne Flute – I skipped this step for the mocktails so that I could tell the difference between the alcoholic and non-alcoholic drinks.
- Fill the glass 2/3 with champagne or sparkling cider.
- Add the pomegranate juice.
- Top off with a splash of ginger beer.
