I call these Double Decker Turkey Tacos an easy, upscale, homemade version of the Taco Bell Double Decker Taco. The magic of the combination comes with the contrast in textures, and the flavors of the guacamole and cheese. (This post contains affiliate links.)
Speaking of the cheese, I use a terrible, bad for you, processed cheese that makes these turkey tacos taste oooohhh soooooo amazing!!! I’m just putting that out there right now, before we even get started.
If you really wanted to, you could use regular (or real) shredded cheese and these would still be delicious. I justify the use of the fake cheese by the fact that there’s really not that much on each taco. Plus the health factor is totally balanced out by the purple cabbage and use of turkey instead of beef.
Then again, you may not care about such things, and only care about your food tasting delish. And let me tell you my friends, these will not disappoint.
How to Make Double Decker Turkey Tacos
Ingredients:
1 Package Crunchy Taco Shells
6″ Soft Flour Tortillas
8 oz Guacamole (Wholly Guacamole store bought, or the Trader Joe’s version, work great)
1 Pound Ground Turkey
1 Package Taco Seasoning
1 Jar Cheese Whiz (even though it pains me to put Cheese Wiz in a recipe)
2 Beefsteak or 3 Roma Tomatoes, Diced
2 Cups Shredded Purple Cabbage (pre-packaged if you can find it, or slice it yourself)
2 Tablespoons Olive Oil
3 Small or 2 Medium Limes
Salt and Pepper to Taste
Directions:
1.First, prepare the shredded cabbage by putting it in a bowl and adding the olive oil, limes, and salt and pepper to taste
2. Brown the ground turkey over medium high heat
3. Add the taco seasoning to the cooked ground turkey per package directions (mine was only a package of seasoning and 3/4 cups water)
4. While that’s cooking together, spread a thin layer of guacamole on one side of the soft flour tortilla
5. Wrap the guac covered flour tortilla around the crunchy corn tortilla
6. Warm up the Cheese Whiz either in the microwave in 30 second increments (be sure to take the metal cap off), or put it in a sauce pan and cook it on the stove
7. Now you assemble the taco layering turkey, cheese, diced tomatoes, purple cabbage
