Dinner Menu Week Thirty-One

You know how some weeks you’re just really excited for everything you have planned? Well this week is like that for me. There’s not one thing on the menu that I’m wishy washy about. In fact, we’re trying a new Mexi Pasta dish that I’m pretty excited to see how it turns out. I’ll be sure to let you know!

Dinner Menu Week 31

THIS IS HOW WE DO IT:

Beef Stroganoff

Recipe here

Thai Chicken Lettuce Wraps

Marinate some chicken in your favorite Thai or Peanut Sauce. Grill then slice. Use bib lettuce as the “wrap” and put then chicken, chopped cilantro, crushed peanuts, shredded carrot, and a squeeze of lime.

Nicoise Salad

Mexi Pasta

This one is an experiment,  but I’m excited to try it. I saw this black bean rotini at Trader Joe’s and figured there was something fun that could be done with it.Trader Joe's Black Bean Rotini

I’m going to mix in the TJ’s roasted corn (frozen), fire roasted diced tomatoes, sliced grilled chicken, mix it with a cheddar sour cream bechamel (make a basic bechamel, use this recipe, then stir in shredded cheese and sour cream). Stir it all together then add diced avocado at the very end.

Turkey Meatball Subs

Use frozen turkey meatballs, cook them by simmering in a pot of marinara sauce. Meanwhile preheat the broiler in your oven or toaster oven. Put the meatballs and sauce in a hoagie roll, and top with mozzarella cheese. Put under the broiler for a few minutes to let the cheese get all melty bubbly and brown. Yum!
