Do you remember the first time you tried a Bahn Mi sandwich? Have you ever had one? I honestly can’t remember when or where I first tried this explosion of flavor, but we started making them years ago and have evolved our own version into one of the things that we’re eating for dinner this week. THIS IS HOW WE DO IT:
Bahn Mi Sandwich
This is one of MANY variations: You could use pretty much anything, but we use a thinly sliced seasoned pork cutlet as the meat. Bread should be like a French hoagie roll. Then mix some Sriracha with mayo to put on one side of the roll. American cheese on the other side of the roll (probably not traditional but trust me, it’s delicious). Top with these delicious pickled carrots/onions/radishes, and a bit of cilantro.
Roasted Veggie Pasta Primavera
Grilled Chicken, Blue Cheese Potatoes, Avocado Pineapple Salad
Marinate the chicken for at least a couple hours in this marinade. Consider yourself lucky, because my mom just posted her famous Creamy Blue Cheese Potato recipe on her site Real Food Real Life (they’re like the richest, best thing ever)! And the Avocado Pineapple salad is number 3 in 7 Unique Twists on a Side Salad.
Black Bean, Quinoa, Chipotle Chili
Turkey Enchiladas
Going quick and easy on this one. Slice up some turkey cutlets. Cook in your favorite enchilada sauce, I like to use a green one for turkey. Roll the turkey and a bit of sauce up in some tortillas, flour or corn your choice. Layer them in a casserole dish. Pour the remaining sauce over the whole thing. Smother with shredded cheese and bake at 375 degrees for 25 minutes.
Open Faced Meatball Sandie
Surprisingly this can usually be made with items we already have in the kitchen. Frozen meatballs, marinara sauce, bread, Parm, and mozz cheese. Toast a slice of bread or bun of your choice. Heat up the meatballs in the marinara sauce. Spoon the meatballs and sauce over the toasted bread then sprinkle with Parm, then the shredded mozzarella. Either microwave for a minute to melt the cheese, or put the sandwiches under the broiler for a minute.
Chili Cheese Baked Potatoes
Assuming you will have leftover chili, dress up a baked potato with that, some sour cream, and some shredded cheese… because I love cheese.
