Dinner Menu Week Forty-Two

It was a sad day at the grocery store today. I had to buy tomatoes for the first time in a very long time. For me, that always signifies the last of summer is really gone, and fall is really here. Luckily fall is my absolute favorite time of year… crockpot meals, roasted vegetables, deep flavors, plus my obsession (addiction maybe?) with creamy cheesy dishes is a little more acceptable.

This is How We Do It

Ginger Scallion Wings with Parsley Rice

I got a yummy sounding Ginger Scallion Wing Sauce, so put it in a crockpot with some frozen wings. Cook for 6 hours, then finish off on the grill for that crispy outside (could also put under the broiler). Cook up some white rice and toss it with butter, salt, pepper, and parsley.

I’ll post a recipe soon, it will be loosely based off of this one from Once Upon a Chef.

Nicoise Salad

I know we just had this a few weeks ago, but we always seem to have the fixins in our fridge. Here’s the recipe.

Potato, Rosemary, Gruyere Pizza

It may sound strange, but it’s sooooo good! We may be out of tomatoes, but my sister-in-law picked up some super fresh Idaho potatoes. Slice the potatoes fairly thin, and boil until JUST soft. I like to use a frozen pizza crust, then instead of sauce drizzle olive oil and some chopped garlic all around the crust. Put a thin layer of mozzarella cheese, then layer the cooked sliced potatoes, chopped fresh rosemary, and gruyere cheese. It’s also good with bacon if you feel like you need some protein on there.

What We Really Ate Last Week

The dinner menu for Week 41 was mostly for your viewing pleasure. I was out of town on business most of the week

Sunday – Ginger scallion wings over parsley rice

Monday through Thursday – I was out of town so we all ate something different, a mix of out, take out, leftovers, and frozen meals (my parents feed the kids so they always eat well).

Friday- Random night, we grilled some Italian chicken sausage, sliced and tossed it with arugula parm ravioli.

Saturday – Butternut squash, sage, pancetta carbonara (YAY!!! We followed one night)
