Anyone else feel like they need to eat nothing but salad and veggies all week? Don’t get me wrong, I absolutely love holiday food and holiday eating, but I can tell my body is screaming for some healthy foods that aren’t cooked in butter and cream. So boring!!!
This week I’m trying to get back to a little bit of normalcy and good old comfort food, while still trying to use up some of the Thanksgiving leftovers we have around. I get a “holiday turkey” every year from work. So we are going to cook that on Sunday using the amazing Beer Brine and Butter method that creates the most most, delicious bird every time.
Dinner Menu Week 47
This is How We Do It:
Big Salad
Just like the Seinfield classic. Lettuce, big chunks of tomato, hard boiled egg, chunks of cheddar cheese, chunks of turkey, avocado, homemade croutons. Basic and delicious.
Turkey Cranberry Crescent Rolls
Take your basic crescent rolls in a tube, and roll some turkey, cranberry sauce, and maybe a little brie or mashed potatoes up inside them. Bake and enjoy.
Spaghetti and Meatballs w/Salad
Basic and simple. Yum.
Grilled Chicken Avocado Burrito

Meatloaf Burgers
Pretty easy really. Just use your favorite meatloaf recipe, but form the meat into patties instead of putting in a loaf pan. Bake them on a baking sheet, and enjoy!
Mediterranean Quinoa Bowl
Cook up a couple cups of quinoa. Stir in feta, roasted or cut tomatoes, cucumber, little bit of chopped mint, splash of vinegar and some olive oil. Oh, and salt and pepper to taste.
Broccoli and Stuffing Casserole
This is a classic my mother-in-law makes every year after Thanksgiving. I’m sure this is not how she makes it, nor will it taste as good as hers, but what we’ll do is heat up a couple boxes of cream of mushroom soup from Trader Joe’s, stir in steamed broccoli and shredded cheddar cheese. Put in a 9×9 baking dish, top with stuffing, bake at 350 for 30 minutes.
What We Really Ate Last Week Compared to What I Had Planned:
Sunday – Halibut Lasagna
Monday – Mushroom Pappardelle
Tuesday – Gyros
Wednesday – Leftovers
Thursday – Thanksgiving
Friday – I KNOW we fed the kids, but I think my husband and I just grazed.
Saturday – Beef Stew
