I will tell you now, however, I don’t do New Year’s resolutions (i.e. diets). And as Week 48 made apparent, I don’t do diets well either. What I DO try and do, is eat as healthy as realistically possible with our crazy schedules. Some nights, that means I’m totally happy with the fact that dinner didn’t come out of a can, even though it may contain lots of cheese and butter. But at least it’s real food.
Then there are nights that dinner WILL come out of a can. Oh well, life goes on. At least our tomato soup comes out of a box now instead of a can. Speaking of which, here’s what we’re having this week:
Dinner Menu Week 49
This is How We Do It:
Chicken Fried Steak and Eggs
When my husband said he wanted this I was like “really?!?!?” And then I was like “oooooh, that does sound good!!!” We’ll make it healthy by using panko and baking it instead of frying it. Use cube steak if you can find it, otherwise you’ll want to pound the crap out of whatever steaks you find to use. Dip in an egg and milk mixture, then in a panko and salt/pepper mixture. Repeat. Spray the steaks with pan coating so that they crisp up in the oven. Bake 12 minutes each side at 420°, or until cooked. Top with over easy eggs. Who needs vegetables?
Tuna Melts and Tomato Soup
Here’s said soup-in-a-box. For the sandwich we like to to do open faced, tuna salad, sliced tomato, cheese, then bake in the toaster oven until the bread is toasty and the cheese is melty.
Thai Pizza
I was inspired by this recipe from I Heart Naptime. We’ll just use our pickled carrots the we canned this summer because they’re sooooo delicious.

Turkey Lettuce Wraps
See, we’re on somewhat of a healthy kick here! This is how we do Turkey Lettuce Wraps.
Spinach Tomato Pesto Farfalle
This is some of my favorite comfort food. Saute the spinach and tomato together with onion and garlic. Add the cooked farfalle when it’s done. Stir in some pesto while it’s all still warm. Top with LOTS of parmesan cheese!

What We REALLY Ate Week 48:
Sunday – We served lots of food at my son’s 2nd birthday party (super awesome construction theme) so we didn’t really eat dinner.
Monday – Thanksgiving leftovers. Yes, we still had leftovers. This was the end of it though.
Tuesday – Curry chicken over rice
Wednesday – Broccoli (beer) cheese baked potato
Thursday – Sweet potato noodle chicken alfredo (even my husband admitted to liking this one… WIN)
Friday- Leftovers
Saturday – Top sirloin steaks, asparagus, cauliflower mash
