Dinner Menu Week Forty-Four

Once again, I’m out of town for some of the week. Then when I get back I get to go have a birthday dinner at my parents’ house. So I’m not sure which of these we’ll get to this week, but I can pretty much guarantee one of them will be the Leftover Wraps. This was an idea from one of my good friends who never steers me wrong. Can’t wait to try them!

Dinner Menu Week 44

Weekly Dinner Menu, Week 44

This is How We Do It:

Pork Tenderloin, Sweet Fries, and Salad

Someone gave my husband a jar of plum jam, so we’ll glaze a pork tenderloin with that and grill it. We make homemade sweet fries like this. And a basic side salad.

Baked Mac and Cheese

We use my mom’s recipe from Real Food Real Life, and I’ll sometimes add spinach in to make me feel healthy.Mac and Cheese with Spinach and Diced Ham

 

 

 

 

Orange Chicken and Rice

This is one of the Trader Joe’s classics. Their famous Orange Chicken in the frozen section, and the frozen Jasmine rice that is ah-ma-zing. Quick and super easy, but doesn’t taste like you’re eating a tv dinner.

Sausage and Peppers Over Polenta

Here’s the recipe.

Chicken and Veggie Thai Curry

Find your favorite curry simmer sauce and cook it with diced chicken, bell peppers, bamboo shoots, onion, snow peas, and potatoes. Serve over rice.

Leftover Wraps

Can’t wait to try these! We happened to have a bunch of different tortillas in the fridge, so we’ll take whatever leftovers we have, heat them up, wrap them up, and enjoy.

Sweet Potato Bacon Hash

I had forgotten how delicious this was, plus it’s very fall feeling. Here’s the recipe.

What We Really Ate Last Week:

Sunday – Leftovers

Monday – I forgot this was Halloween. So we fed the kids cheese, sliced turkey, and carrots so that they would eat quickly. My husband made himself a sandwich, and I think I had a couple of beers for dinner… And maybe a couple of Reese’s.

Tuesday – Broccoli Cheeseburger Baked Potatoes

Wednesday – Steak, English Peas, Rice Pilaf

Thursday – Saucy Scallops (another Trader Joe’s freezer classic)

Friday – Burgers

Saturday – Wine and Cheese Party
