I have somehow ended up with an insane amount of tortillas in my fridge, so this week I’m attempting to find some innovative ways to use them. My daughter used to live off quesadillas, but now that she’s moved on it’s a little harder to use tortillas all up before they go bad. For the pizzas, I’ve listed some ingredients below, but it’s always one of those things you could pretty much use anything you have in your fridge as a topping. - 8″ to 10″ Tortillas (pizzas, wraps, enchiladas)

- Elbow Macaroni (American Chop Suey)
- Worcestershire Sauce (Chop Suey)
- Artichoke Hearts (pizzas, enchiladas)
- Couscous (yep)
- Marinara Sauce (pizzas, enchiladas, Chop Suey)
- Chicken Broth (couscous)
- Mozzarella (pizzas, enchiladas, Chop Suey )
- Ricotta (enchiladas)
- Small Velveeta (this kills me, but it’s necessary for Chop Suey, you could do high quality American cheese if Velveeta is too weird for you)
- Tortellini
