The majority if this week’s dinner menu comes to you courtesy of my Mom. Yes, the grandparents are coming camping with us this week. She put together our entire menu and will also do all the cooking. I’ve made the second half of the week fairly simple since we’ll have no food in the house and no energy for fancy cooking when we get back. Also, when we return I’ll be posting a roundup of some delicious camping recipes that are out there.
Since my mom has done most of the grocery shopping for the week, you’ll have to ask her for the grocery list. I can tell you how to make the Smoky Peach Sweet Potato Nachos, though:
You’ll need – Sweet potato chips, smoky peach salsa (both of these are easy to find at Trader Joe’s), shredded mozzarella cheese.
