Are you looking for a little something different for dinner tonight? Sometimes combining the simplest of ingredients creates some of the best meals.
None of this is from scratch cooking, except maybe the yogurt sauce, but just putting these simple elements together make for a deliciously unique, and super easy, weeknight meal. I want to share it with you because even though it’s so easy, I never really thought to put it all together until recently. So I thought I would spread the love.
How to Make Curry Meatball Pita w/Naan and Cucumber Yogurt Sauce
Ingredients
1 Cup Plain Greek Yogurt
1 Cucumber
1 Lemon
1 Bunch of Mint (optional)
Store Bought Naan (Trader Joe’s has a great fresh one, and you can often find them in the frozen bread section as well.)
Salt and Pepper to Taste
Directions
1.Pour the curry sauce in and simmer until meatballs are cooked
2. Meanwhile, dice up the cucumber and stir it into the plain yogurt
3. Squeeze the lemon in and add salt and pepper to taste
4. You can chop up some mint and add it as well if you want, but it’s not necessary
5. Heat up a pan on the stove over medium heat, warm the naan for about a minute each side
6. Once the meatballs are cooked, assemble like a taco – Naan, meatballs, cucumber yogurt sauce
