This is one of those meals I thought I was being all creative when I made it one evening for my husband. We sat down to the table, started eating, and my husband said “oh, this is like the Chalupa my mom used to make”. Sure enough, I looked up Chalupa,and my creation already had a name. Regardless, it’s still delicious and easy.
Ingredients
- Pork Butt
- 1 Jar Green Salsa
- 1 Avocado
- 1 Tomato
- Chopped Romaine
- Sour Cream
- Shredded Cheese
- Tortilla Chips
Instructions
- In the morning, put pork butt in the crockpot with green salsa
- 6-8 hours later, shred the pork with two forks and let sit in the juices while you prep the rest
- Dice the avocado
- Dice the tomato
- Spoon the pork in a bowl
- Top with shredded cheese, diced tomato, diced avocado, dollop of sour cream
- Use tortilla chips as spoons, and enjoy!
