Once again, I will be out of town for a few days this week so needed some easy meals for my husband to prepare. Even though he does all the cooking anyway, it’s much harder to make dinner and wrangle the kids at the same time.
HERE’S HOW WE DO IT:
Caesar Grilled Chicken, Caprese, Risotto – Marinate chicken (breasts, thighs, legs, whatever you’re feeling) in Caesar dressing (I like the Ken’s version) for at least a couple hours. For the Caprese slice up some tomato, fresh mozzarella, and basil. Drizzle olive oil, salt and pepper, and let sit for at least 15 minutes before eating. We use the frozen Risotto from Trader Joe’s.
Southwest Grilled Shrimp Salad- For the salad use crisp romaine, top with corn, black beans, avocado, tomato, red onion, cilantro, and avocado. Grill the shrimp and put on top. Use whatever dressing you like, Trader Joe’s has a Cilantro Vinaigrette in the produce section that’s perfect!
Flank Steak, Ratatouille, Buttered Noodles – Marinate the steak in soy sauce, Worcestershire, and horseradish overnight. For the Ratatouille cut up some zucchini, eggplant, and white onion in about 1/4 inch dice. Sautee in butter and olive oil. Add a can of diced tomatoes. Simmer for about 15 minutes, or until the veggies are soft and delicious. Top with Parmesan. For the buttered noodles, we use egg noodles, cook them, add butter, parsley and Parmesan.
Smoky Peach, Sweet Potato Nachos – Follow the Guide to Making Amazing Nachos. Use sweet potato chips, smoky peach salsa, and mozzarella as the cheese.
Grilled Cheese and Tomato Soup – Try putting some butter and Parmesan cheese on the outside of the bread before you grill it (yes, I realize I have a problem with cheese).
