This week is definitely not about reinventing the wheel. I was out of town much of last week so haven’t had much time to plan for this week. It’s funny though, both my kids and my husband probably prefer when I don’t have a ton of time to come up with creative dinner menu ideas, that just means easy, kid-friendly meals all around!
THIS IS HOW WE DO IT:
Pizzadillas w/Side Caesar Salad
One of the most kid-friendly foods, quesadillas, combined with another kid-friendly food, pizza. This is how we make them. Then to make it healthy we add a little side Caesar salad.
Mushroom Swiss Burger w/Sweet Fries
Grillin’ season isn’t even close to being over! Grill the shrooms in a foil pocket next to the burgers. Right before you take the burgers off the grill, pile them on top of the burger, then melt a slice (or two) of Swiss cheese on top. Use this recipe for the fries.
Asian Chopped Chicken Salad
Spinach, Mushroom, Chicken Couscous
Grilled Flank Steak, Artichokes, Caprese
I sometimes have to remind myself that every meal does not necessarily need a starch. This still has three components and between the artichokes and caprese, you won’t even miss the potatoes. For the flank steak be sure to marinate the steak for AT LEAST 24 hours before grilling.
Taquitos, Rice and Beans
Don’t judge. This used to be one of my favorite “quick” meals growing up. Pop some good ole frozen taquitos in the oven, topped with shredded cheese, until cooked through and crispy. Serve with a side of Spanish rice and refried or black beans. Top with chopped lettuce, diced tomatoes, a dollop of sour cream, and some homemade salsa.
