We had a lot of overtime in our house last week. My husband’s been working late, which means I stop twice to pick up the kids on the way way home, which puts our entire evening behind and makes dinner impossible to throw together before the kids go to bed. We didn’t even get around to trying the Nutty Blue Cheese and Beet Spaghetti from last week. So this week, I’m really truly planning meals that require very little thought and effort the night of. Then if we actually get home at a reasonable hour, maybe we’ll try the Beet Pasta again.
BOLOGNESE RAVIOLI W/MARINARA – Trader Joe’s has this delicious Bolognese Ravioli, it’s yummy just topped with some marinara and Parmesan cheese.
CROCKPOT STEAK FAJITAS – Put a flank steak on top of some sliced peppers and onions in a crockpot. Cover in a mixture of soy sauce, Worcestershire, garlic, Sriracha, and horseradish. All you have to do when you get home is slice, then serve in 6″ flour tortillas.
ROASTED BALSAMIC CHICKEN AND VEGGIES – Get the recipe here. If you feel like you’re missing a starch, cut up some potatoes to put them on the sheet as well.
SAUCY SCALLOPS – Good old TJ’s standby in the freezer section, and a great price as well. We serve it on top of pasta.
CHILI CHEESE TURKEY DOGS – Chili, cheese, turkey dogs.
GRILLED CHEESE AND TOMATO SOUP – We always have bread, lots of cheese, and a box of tomato soup in our pantry.
STEAK QUESADILLAS – Use the left over steak, peppers and onions, cheese, and flour tortillas.
